Actually, I sometimes feel that LL relied on a formula, hero rides into trouble, has to fight his way out, on the way out, finds a helpless someone who stirs his sympathy, goes back in, has the obligatory fist-fight-with-unbeatable-fighter that results in massive injuries to both, and then the gun battle, hero gets the girl. That's just the outside, though. Like Brent said, it's what happens between the formula moments that makes him a great story-teller: The richly described scenery, the nuggets of wisdom mined as carefully as gold, the human interaction, the wonderfully real characterizations of even the most minor of players. These make the stories worth reading over and over, and one still finds more in them the next time.
